This Japanese Style Cook's knife is designed for slicing and cutting. It works well for boning chicken and filleting fish. It also works excellent with vegetables; use it to make a beautiful julienne, dice, or brunoise. Tramontina Century knives classic design utilize only the highest quality chromium-molybdenum stainless steel to assure a long-lasting edge sharpness and a perfect cut. Blade forged in one single piece (monobloc), which guarantees the product“s resistance and durability. The 55HRC to 58HRC hardness level is obtained through a modern tempering process which yields a durable and sharp edge. The anatomical handle feel comfortable and safe while handling. The weight is ideal, balancing the knife movement and allowing perfect swinging when cutting.
