Mauviel Copper Sugar Pan
Pastry chefs and confectioners rely on this traditional copper pot to heat sugar or sugar syrups for making candies and desserts. The pan can also be used to heat other foods or to reduce small amounts of sauces. The pan's thick copper construction warms rapidly and distributes heat evenly so that every granule of sugar melts without clumping. In addition, the pan also cools quickly when removed from the burner to prevent contents from overcooking or burning. Unique conical copper handle is secured with copper rivets. Made in France. Mauviel recommends hand washing the cookware, which carries a limited lifetime warranty.
